The Healthy Power Omelet

Recipe Time: 13 Minutes

Ingredients

1 whole egg

2 egg whites

1 red onion

1 red chili (optional)

1 red pepper

2 cups chopped spinach

Chopped fresh parsley to garnish

75g grated strong cheddar
Preparation

  1. Finely chop all the vegetables, and grate the cheese
  2. Fry the onion, chili and pepper until tender (use a small non-stick pan and 1 teaspoon extra virgin olive oil)
  3. Add the spinach and wilt
  4. Beat the eggs together and pour in to the pan, on a low heat.
  5. Mix quickly and sprinkle over the cheese
  6. When the omelet is almost cooked through, sprinkle over the cheese and put the pan under the grill
  7. Cook for another few minutes
  8. Serve up with a sprinkle of fresh parsley
